Head Chef at The Commons Delft
You are the ruler of the kitchen domain, a larger-than-life personality that leaves a stamp on every dish that hits the tables. You are also a true leader, able to manage, motivate and inspire your kitchen staff to strive for high culinary standards. This is your opportunity to own and shape a menu with passion and expertise, to coordinate a stream-lined and efficient cooking process, to create recipes and menus based on market trends and budget boundaries. You'll be expected to maintain healthy profit margin while using the best possible ingredients. As a chef, you know what your guests crave and you are completely committed to giving them a memorable dining experience.
Our new baby in Delft is built with sustainable design principles as top priority and circularity in mind – we need our team to vouch for this circular environment! So, what makes TSHDelft unique?
Our architects have made sure our furniture and lightning is circular, whether that be with second-hand furniture or recycled materials! Our chefs cook the best comfort food with waste-reduction in mind!
We're also very mindful when using water and electricity (check for polar bear monitors in the showers!) and last but not least, we have a goal to reduce our company footprint by making sure we maximise the amount of renewable energy on-site!

THESE ARE SOME OF YOUR RESPONSIBLITIES...
  • Ensuring all resources are available to staff to enable them to perform their tasks in a proper and timely manner;
  • Proper communication to staff of daily specials, menu changes and special (dietary) needs of guests;
  • Setting up yearly kitchen plan and corresponding budget;
  • Monitoring costs from suppliers – identifying opportunities to reduce costs;
  • Monitoring portion and waste control to maintain profit margins;
  • Recruitment of talent;
  • Responsible for proper onboarding of temporary and permanent staff;
  • Analysing training and development needs of staff based on daily Sous Chef report and performance management conversations with staff;
  • Menu engineering – processing menu changes based on season, guest feedback and market trends;
  • Controlling of incoming goods – such as supplies, ingredients and pre-fabricated foods.

JOB RESPONSIBILITIES
  • Minimum of 5 years relevant work experience in a managerial role at a similar level kitchen;
  • HACCP certified;
  • Strong knowledge of food products according to market standards;
  • Excellent knowledge of modern cooking techniques.
